Maple Butter + Thyme Braised Carrots 

Braised carrots are easily one of my favorite sides to serve around the holidays for a sweet, savory punch of flavor and this particular recipe with maple butter + thyme glazed carrots is a total showstopper to serve for your next get together.

Ingredients:

  • 4 tablespoons unsalted butter

  • 2 lbs baby carrots, halved on the bias

  • 2 teaspoons kosher salt

  • ½ teaspoon ground black pepper  

  • 1/2 cup vegetable broth

  • 2 tablespoons maple syrup

  • 2 tablespoons coconut aminos

  • 1 tablespoon light brown sugar

  • 4 thyme sprigs

Method:

  1. Melt butter in a large skillet on medium heat. Add the carrots, salt and pepper. Raise to medium-high heat and sauté for 5 minutes stirring occasionally.

  2. Add the broth, maple syrup, coconut aminos, light brown sugar, thyme sprigs and stir until well combined. Bring to a high simmer then cover and reduce to medium-low heat for 15 minutes, stirring 2-3 times in between.

  3. Uncover and cook for 3-5 more minutes or until the sauce is bubbly and reduced a bit and the carrots are fork tender. Season to taste. Serve immediately!
