Hidden Veggie Spinach Dip
Love sneaking in some added veggies for a more nourishing, classic everyday snack! This couldn’t be easier to meal prep for the week ahead and a great way to get those greens!
ingredients:
5 oz spinach
½ cup shredded carrots, about 1 medium sized carrot
¾ cup of 2% or whole greek yogurt
¼ cup mayonnaise
2 tablespoons grated parmesan cheese
1 teaspoon lemon juice, about ½ a lemon
1 teaspoon garlic powder
½ teaspoon crushed red pepper
¾ teaspoons of kosher salt
Method:
Wilt spinach for 1 minute in microwave safe bowl uncovered. Wrap in a paper towel and wring out the moisture. Add the spinach to a blender with the remaining ingredients and pulse until fully combined, scraping down the sides of the blender as needed. Serve chilled with your favorite veggies and crackers.
