Black Eyed Pea Hummus with Pimiento Relish
I've been making this black eyed pea hummus every New Year's Eve for the last 3 years and it's always a hit. An ideal way to get those black eyed peas in (which you must!!) and doubles as a great healthy option to keep snacking on in the week ahead! I hope it brings you and yours all the luck this coming year!
For the Black eyed Pea Hummus:
1 can chickpeas, drained and rinsed
1 cup canned black eyed peas, drained and rinsed
¼ cup drippy tahini
2 tablespoons extra virgin olive oil
2 garlic cloves, minced
½ teaspoon smoked paprika
1/3 cup water, or as needed to blend
3/4 teaspoon salt, plus more to taste
For the pimiento relish:
3 tablespoons jarred diced pimientos, drained and rinsed
1 tablespoon salted pepitas
2 tablespoons fresh cilantro, minced
1 tablespoon sherry vinegar
Pinch of kosher salt
Drizzle of good olive oil
Flaky sea salt, for garnish (optional)
Method:
Add all of the hummus ingredients to a blender and pulse until smooth, adding water as needed to reach your desired consistency and season to taste. Spread the hummus evenly in a serving bowl and set aside.
In a small mixing bowl, combine all the relish ingredients. Spoon the relish over the hummus in a ring formation (for extra festive effect!) and finish with a drizzle of olive oil and a pinch of flaky sea salt. Serve with cucumber, snap peas, carrots and/or crackers.
